A lot of camping meals ideas are quick and easy…….but they are also loaded with all the stuff doc’s tell us to stay away from.
Fats, sugars, carbs, gluten……all the great tasting stuff.
So when the hubby and I are camping, we try to balance our meals-good and healthy meals with some of the not so healthy meals.
That’s why, when I found this zucchini pasta recipe, I was soooooo excited!!!!
A pasta dish that doesn’t use pasta……instead you use zucchini sliced for your pasta, top with your choice of sauce and serve.
It’s such a simple and easy camping meals ideas……
This recipe is so basic:
Here’s what your gonna need to start cooking:
3 zucchini ( I used the small ones bought at my local store) If you have the monster one’s stolen from someones garden, you won’t need many zucchini’s)
your choice of pasta sauce
Cut the zucchini in long ribbons, using a mandolin or a knife.
Cut the ribbons lengthwise, into 3-5 strands depending on the size of the zucchini, so that you have fettuccine-like strands (you could prep this at home and just put in a zip lock baggie).
What type of sauce you decide to use from here on out is up to you. You can use a purchased spaghetti sauce or Alfredo sauce and just heat and serve over your zucchini.
You could also use some pesto sauce and mix with the zucchini………..
- cherry tomatoes
- marinated artichoke hearts
- marinated mushrooms
I made up a batch of zucchini pasta with some Alfredo sauce and sauteed shrimp…….Jerry just about licked the flowers off the plate…….it was that good!!!
